The PeachValue project is part of the strategy to strengthen the circular bioeconomy and green chemistry in the Greek agro-food sector, utilizing the agricultural residues of peach for the production of high-value-added products. Greece, 5th in the world in peach production and 1st in exports of pulp, has a strong base for the transition from the traditional «farm to fork» model to an innovative «farm – bioeconomy – fork» triangle. PeachValue aims to comprehensively valorize the waste from the peach industry, converting peelings, husks and other by-products into valuable bioactive ingredients (such as phenolic compounds, carotenoids, pectin) and intermediates (such as HMF, oligosaccharides, organic acids), using friendly technologies. The project’s methodological approach is organized into six stages. In the first, green extraction methods for bioactive compounds are developed using ultrasound and mild solvents (HET-APHT), while Del Monte provides raw materials. In the second stage, the chemical/biological characterization of the extracts is performed using HPLC, GC-MS, NMR, etc. (HPLC-APTH & EOX-APTH). In the third stage, the pectin and lignocellulosic biomass are utilized to produce HMF, sugars, and organic acids through enzymatic and photocatalytic processes (EOX-APTH), adapted to the needs of industrial application (Del Monte). The in vitro evaluation of the biopersistence of the compounds (antioxidant, antimicrobial, and anti-inflammatory action), the development of final applications (natural preservatives, packaging, and supplements), and the installation of a pilot plant with a full techno-economic and environmental assessment (LCA/LCC) follow. The innovation focuses on the use of photocatalysts and mild conditions (UV-A, natural light, the use of oxygen and enzymes), avoiding chemical agents such as sulfonic acids. The goal is to selectively produce HMF and other products from fructose and pectin under mild, sustainable, and economically feasible conditions. HMF, recognized as a critical chemical intermediate, has market prospects of 67 million USD by 2028 and is characterized as a «transitional station» between biomass and industry. The project aims to highlight the use of organic photo-stimulators, a technology in its initial stage with vast potential and few examples in the international literature. The new techniques are compared with existing (conventional or acid/enzymatic hydrolysis) techniques and seek to differentiate products and functionality. The socio-economic contribution of PeachValue is multifaceted: it promotes the environmental responsibility of the agro-industry, creates opportunities for SMEs, reduces imports of additives and enhances sustainable agricultural development. The collaboration between farmers, processors and researchers (APTH, Del Monte, cooperatives) ensures documented, commercially applicable know-how. PeachValue focuses not only on final products, but on a model of circular valorization that can be extended to other crops (olives, tomatoes, grapes), promoting the transformation of waste into value and linking science – production – society.
